The clearest sign of an authentic Indian restaurant is a narrow menu tied to one region, rather than a long menu covering all of India. India is not one cuisine, and no single kitchen cooks all of it well.
Here are nine signals that hold up almost anywhere in the world.
1. The menu names a region, not a country
"Gujarati", "Chettinad", "Hyderabadi", "Malabar", "Kathiyawadi" — a kitchen that names its region is telling you it has a point of view. "Indian cuisine" as a category is a warning sign.
2. It is short
Sixty dishes across every region usually means one or two base gravies with different garnishes. Twenty dishes from one region usually means each is cooked properly.
3. Indian families are eating there
The single most reliable indicator, and it costs nothing to check. Look through the window at 8pm on a Saturday.
4. There is a dish you do not recognise
Undhiyu, dal dhokli, pesarattu, kothu parotta, dhansak, kadhi. A menu that only contains dishes familiar to Western diners has been written for Western diners.
5. The vegetarian section is not an afterthought
In most of India, vegetarian cooking is the main event, not a concession. A serious kitchen gives it real estate.
6. They ask how spicy you want it — and mean it
Better still, they tell you a dish cannot be made mild without ruining it. That is a kitchen with standards.
7. The bread programme is real
If there is a tandoor, breads should arrive blistered, hot and slightly uneven. Uniform, room-temperature naan comes from a freezer.
8. Regional drinks and sweets are on the menu
Chaas, filter coffee, masala chai made to order, shrikhand, mysore pak. Kitchens that skip these are usually skipping other things too.
9. The colour is not fluorescent
Tikka the colour of a traffic cone is food dye, not spice. Real tandoori marinade produces a dull brick-red or brown.
What is not a reliable signal
Price, decor, and location tell you very little. Some of the best Indian food in any city is served on plastic trays under strip lighting, and some of the worst is served on linen.
